I started with a Marta Bugaile's recipe for faux diced pineapple canned zucchini. I didn't care for the texture of it shredded so I pureed it. It is like a zucchini apple sauce, so I thought it would go great in my kitchen sink cookies which call for apple sauce. It did go great, the cookies were gone in no time! Now I need to make more.
