Easter Dinner Preparations


I peeled and boiled 10 lbs of mashed potatoes.  Boy oh boy that was a lot of spuds!  I mashed them yesterday and put them in a lasagna dish and coated them with shredded cheese.  Then they baked for 2 hours at 375 degrees today.  They were yummy!

I baked the grocery store ham yesterday too.  It was in the oven for 6 hours.  I basted it with the Emeril glaze the last hour.  It was good, but a real sticky mess!  I reheated slices today in the microwave with a little of the glaze.

This was my Easter dinner version of hot cross buns.  I made pumpkin, potato and pumpernickel buns.  It was fine and I liked how they looked, but next time plain buns will be sufficient.  I also made a giant fruit salad.  Uncle Greg brought green bean casserole and Aimee brought her broccoli casserole.
